Restaurant Inspections: Reservations Gourmet To Go

We're starting a series where we talk to managers of local restaurants about their food service ratings with the state.

At Reservations Gourmet To Go, customers stop in for items like chicken saltimbocca, crab cakes and leafy green salads.

In addition to its tasty cuisine, the eatery at 4703 N. Nebraska Avenue also scores high with state officials on their food service practices.

From January of 2011 until a recent inspection in November of this year, records show the restaurant has met inspection standards set forth by the state's Department of Business & Professional Regulation, whose purpose is to regulate entities that include restaurants.

Owners Elke and Anthony Catania say keeping the restaurant - which has been open for four years - as spotless as possible is key to earning high ratings from the state.

"We clean the restaurant every single day," said Elke. "We keep our equipment clean, and that's kind of common sense in our books. We're on top of our inventory and products."

Consistency is crucial with food safety, Anthony added.

"You try to be 100 percent, but no one is," he said. "So, it's a constant daily thing to keep everything clean. Making sure nothing gets near the food. If it's questionable, it gets thrown out."
